Get rid of your steamer basket! At Nom Pot, we're always looking for ways to make Instant Pot cooking even easier. In this recipe, we steam our salmon right on top of the pasta and veggies!

Add 1.5 cups of water to the pot and stir in:
- 1 cup of orzo pasta
- 1 tsp minced garlic
- 2 tsp olive oil
- 2 tsp lemon juice (~1/4 lemon)
- 1/4 tsp garlic powder
Add 1 cup of frozen peas and carrots on top of orzo and spread flat. You can use other veggies but make sure they can withstand pressure cooking!
Season 2 salmon fillets (I use frozen ones!) with salt, pepper, garlic powder, and thyme. Place them in pot on top of veggies and add a lemon slice on top.
Pressure cook 7 minutes and quick release. This is sufficient for a thin salmon fillet, but double check to make sure your salmon is cooked through! Take out salmon and set aside. Add parmesan cheese into orzo, mix well, and let sit for a minute for the orzo to thicken.
